This is a winemaker enjoying himself. Pinot Gris. Using raisined and botrytis (noble rot) grapes. About 1 month skin contact and racked to an old barrel for about a year of fermentation and a year to rest.
Zero sulfur added.
One barrel only/300 bottles.
The dark side of Pinot? Extracta seems almost Mediterraneanely flamboyant at first but then bites you with refreshing acidity. Despite being round, ripe and loud with all its notes of figs, honey, raisins and burnt herbs, the wine still has immense drive, courtesy of its botrytic past.
Iggy Pop would call it lust for life, I call it chi, and love to bathe in it undisturbed – this wine is the perfect companion for an evening meditation in a cosy, tasteful club, listening to piano and enjoying the plenitude of the long Romeo y Julieta Churchill cigar, its cold smoke and extravagance echoing the wine's personality... If you are less of a cigar-lover than I am, serve it with some aged cheese and true honey, it's just as indulgent. Definitely calls for a decanter and big enough glass.

Meet Pivnica Čajkov. A small craft winery located at the foot of the Štiavnica Mountains and the remains of the Sitno volcano in the village of Čajkov, within the Nitra wine region.
Marek now leads the Uhnák family winery after generations of toil and is harnessing local varieties such as Pesecká Leánka and Feteasca Alba - varieties that are increasingly disappearing in favour of more convenient and popular international varieties. Despite the challenges Marek believes that his local gems are particularly suitable for the local climate/conditions and is passionate about sharing them the world.
