Textural, floral, spicy and unique Gewurztraminer.
When asked what he does to the fruit in the winery, Taras says, “Whatever they teach you to do when making aromatic whites, I just go and do the opposite”.
He wants the fruit to ripen at different times, making some of the berries ripe and juicy, some lean and crunchy. All adding a little something different to the overall 'feel'. Basket pressed, some old wood used as a fermenting vessel.
A lovely savoury touch that balances the aromatics. Lychee, lavender, manuka honey jump out of the glass from across the room. Rose petal, lemongrass, mandarin skin. Ginger and acid. Long and bright finish.
Picked from a single vineyard. Pressed directly to seasoned french oak with full solids and regular batonnage. MLF prevented.

Ochota Barrels is a legendary winery by husband and wife team Taras and Amber Ochota, based out of the Adelaide Hills in South Australia. Unfortunately, the wine world lost one of it's absolute gems in Taras in 2020 but Amber has picked it all up and plugged the giant hole with love and support like only a good wife and mother can (with support from Taras's father). So much respect for that legend (both). The wines and the Ochota brand represent a turning point for Australian wines in many ways, a shift to natural philosophies but always bringing fun, laughs and freshness. I will always treasure the brief moments I spent talking to Taras as milestones on my wine journey. Not to mention the impact of the wines themselves.
