This a dry (not sweet) sparkling wine that has zero added sugar ("Nature"). Yes, conventionally made sparkling wines generally have added sugar that helps create the fizz and balances the acid.
This one is made using the Traditional Method (like Champagne). However uses appropriate ripeness of fruit in-place of adding sugar. The result is a wonderful example of balance and elegance.
This example has spent 24 months on fine lees adding notes of brioche and cream to the red berry notes brought by the Pinot Noir and Andre grapes. This is my kind of traditional sparkling. Fine yet characterful. Telling a story of where it's come from with homage to tradition.
Syfany winery is a family affair from South Moravia, Czechia. Lots of heart. Plenty of local character, craft and patience comes through in their wines. They are wines that aren't rushed and aren't waiting for your compliments - just honest craft. I really think they are onto a good thing.
