Achillee is the big daddy to the Pepin range.
These are estate grown and bottled wines.
The vines have been organic for over 20 years and certified biodynamic since 2003.
Blend: 40% Riesling and the rest divided between Pinot Blanc/Auxerrois/Chardonnay/Pinot Noir and Pinot Gris.
Visual: deep yellow with pink nuances. Very clear. Persistent and fine foam.
Nose: Intense, with notes of mirabelle plum, hazelnut, red apple and citrus fruits (mainly orange peel). Also star fruit and subtle aromas of fresh fruit. Brioche and almond notes on the finish.
Mouth: Fine and persistent bubbles. Very full mouthfeel, testifying to the richness of the vintage. Ripe fruits (red apple, citrus and pore). Finale highlighted by spicy notes such as cinnamon.
Food and wine pairing: Aperitif. Poached oysters with apple jelly, pan-fried scallops accompanied by leek fondue (lemon crème fraîche). Ideal to end a meal with a touch of freshness.
